Mexican Lasagna

Brown onions and meat. Add taco seasoning, chili powder, tomato sauce, and black beans. Mix.

In a separeate bowl, mix cottage cheese and eggs.

Layer ingredients in a 9×13 baking dish:Meat sauce/ cottage cheese & egg/ four tortillas (spread entirely over dish)/ 4 oz cheese/ repeat.

Bake at 375 degreeze for one hour. Cover with foil for the first 45 minutes.

Freeze in aluminum tins, covered well.   If thawed cook as above, if frozen cook until bubbling.

  • 1 lb. ground beef or turkey
  • 1/2 c. chopped onion
  • 1 1/2 c. tomato sauce
  • 1 can black beans
  • 16 oz salsa (your choice)
  • 1 c. cottage cheese
  • 8 soft tortillas (flour or corn)
  • 8 oz shredded monterey jack or cheddar cheese (+ extra because you can never have too much cheese)
  • 2 tsp. chili powder
  • 2 Tbsp. taco seasoning
  • 3 eggs
  • 3 eggs

  1. This recipe calls for Salsa, but the directions don’t say where to use it. Is it a garnish, or is it supposed to be mixed in with the meat mixture?
