Pumpkin Muffins

These pumpkin muffins will be quickly devoured by your family and friends! They are easy to make and freeze very well.

  1. Mix dry ingredients and set aside
  2. In large bowl, beat eggs
  3. Stir in pumpkin, melted butter and chocolate chips
  4. Slowly add dry ingredients
  5. Spoon into muffin pan lined with muffin papers
  6. Bake at 350 for 20-25 minutes.

*For mini muffins, use mini chocolate chips and bake 15 – 18 minutes

For freezing: place cooled muffins in freezer safe bag and freeze; the muffins thaw pretty quickly.

Ingredients

  • 1 1/2 Cup Flour
  • 2 eggs, beaten
  • 1 cup sugar
  • 1 cup pumpkin (real pumpkin not pie mix)
  • 1 tsp banking soda
  • 1/2 cup butter melted
  • 1 tsp cinnamon
  • 1 cup chocolate chips
  • 1/2 tsp cloves
  • 1/4 tsp allspice
  • 1/4 tsp salt
Serves 5
20-25 minutes
